The Perfect Peach Melba Pancake Recipe to Make Breakfast a Treat

Breakfast is the most important meal of the day. But sometimes it might feel like breakfast becomes a bit boring – the same thing time and time again. Breakfast should be fun and filling, especially when you have a busy day ahead. So why not get creative in the kitchen! Create a breakfast that’s sure to keep you satisfied and entertained. Plus, who doesn’t love pancakes?

There is nothing more quintessential than the classic Peach Melba; Annabel Bower from @foodbyannabel is a big fan of the classic and shares her take on a pancake breakfast even the fussiest of eaters will enjoy.

These fluffy pancakes made with protein packed Paris Creek Farms Organic Greek Style Plain Yogurt, deliciously ripe and in-season Aussie peaches, and a ridiculously easy raspberry sauce is an instant crowd pleaser. Not to mention they are served with fresh macadamias for added crunch. Scrumptious!

Peach Melba Pancake Recipe

Pancakes

Ingredients

Whisk together yogurt, 3/4 cup of milk and eggs. Add sugar followed by flour. 

Whisk until smooth, adding the extra 1/4 cup of milk if needed. 

Cook in a heavy-based frying pan over medium heat using a small amount of butter or oil. 

Flip the pancakes when bubbles rise to the surface, cook for a further minute on the other side. 

Raspberry Puree

Ingredients

  • 2 cups frozen raspberries (defrosted)
  • 1 tablespoon castor sugar

Using a stick blender, purée raspberries. Push through a fine sieve to remove seeds and stir in sugar. It’s that simple!

To make this recipe extra special and to add the Peach Melba twist, serve the pancakes with freshly sliced Australian peaches and the raspberry purée for added zing. There you have it, a fresh and simple breakfast made using local ingredients and based on a classic favourite. Enjoy!
